Weekly Menu Plan - May 28 - Jun 3


Happy Memorial Day!  I love three day weekends!  It seems that there is enough time to get all the work AND play accomplished!  It has been a couple of busy weeks with all the kids' year end school activities.  Add in the yard work that needs to be completed, and there have not been enough hours for my blogging hobby.

I awoke before the kids this morning, however, and was able to sit down and plan out a few new entries.  I'm not sure what my blogging schedule will look like for the summer.  I know that I'll keep menu planning and cooking because those tasks bring me joy.  I'm just not sure how many of those recipes will be photographed and documented as those tasts sometimes frustrate me because they are not as perfect as I want them to look.  At the very least, I will be compiling all my family favorite recipes in one place on the computer and hope to make blog posts as often as I can.

It's the last week of school, but our evening activities have pretty much slowed down for the school year.  That means that some of my nightly themes can be adjusted for this week and will definitely change for the summer.  The theme nights help with menu planning, so I hope to come up with a summer theme weekly menu once we get into the groove of our summer routine.  I spent time today charting out the summer and our commitments, and it doesn't seem too bad.  I have tried to build in quiet moments for the girls to "just be" at home.  They're growing up so quickly, and I don't want them to feel like we're always running from one thing to the next.  We seem to eat differently in the summer; I'm sure you do, too.  We like more grill meals and more main dish salads/sandwiches and less oven one dish meals.  I also have learned to rely on my crock pot to make meals while we spend the afternoon at the pool.  I try to be more flexible in my planning, too, as opportunities for extras (sleepovers, BBQs, day trips, etc) seem to be pop up more often.  The last thing I want is to be stressed out over what we'll have for dinner or what we'll pack for snacks/picnics.

It was a great week at the grocery to stock up on meat for the freezer, so I did!  We have lots of ground beef and turkey, chicken, and sausages in the freezer.  I made up patties ready for the grill, browned and seasoned several batches of ground beef, and made a triple batch of taco meat for the freezer.  I love having these meal starters on hand.  The littlest one and I also went strawberry picking this past week and added some strawberries to our frozen fruit inventory.  It's more of a challenge to grocery shop when all 3 kids are home, so I'm grateful for our full freezer and have a long term menu plan to make use of what we have.  Hopefully my weekly grocery store visits can just fill in our menu with some fresh items and great sale price items.

In addition to fresh fruit and salad, here's what we're having around our table this week:

MONDAY - grilled salmon, potato packets on the grill, Caesar Salad, Backyard S'mores
TUESDAY - Ham, fried potatoes, mixed veggies, peaches and raspberries (from freezer)
WEDNESDAY - Smoked Chicken Salad, beer bread
THURSDAY - Baked Potatoes with Ham, Broccoli, & Cheese, Salad, Chocolate Cupcakes (from freezer)
FRIDAY - Burrito Bowls, Chips & Salsa, Fresh Pineapple (only $1 this week @ Kroger!)
SATURDAY LUNCH - Hawaiian Pizza (use leftover ham and pineapple; make extra cheese pizza for freezer for lunches next week)
SATURDAY DINNER- Greek Pitas, Greek Salad, Blueberry Sundaes
SUNDAY BRUNCH - Egg Casserole, Cinnamon Rolls (from freezer)
SUNDAY DINNER - U-Pick Buffet

BREAKFAST CHOICES
Cereal/Toast
Yogurt/Granola
Waffles with Bananas and Nutella
Hard Boiled Eggs
Banana Bread/Pumpkin Muffins with Cinnamon Butter (frozen individually)

Meal Plan - April 23-29


The countdown to the end of the school year has begun which means that our evenings are packed with lots of extra school related activities.  If ever there was a need for a menu plan, now is the time!

We had a few changes to the menu plan from last week with my parents stopping by, so you may see a few repeats from last week on this week's menu.  The beauty of having a menu plan, however, is that I can just plug that meal into a different day.  I already have all the ingredients I need (as long as I don't vary too far from the plan too many times in a given shopping period!).  I keep a monthly menu plan hanging on my frig written in pencil and just move things around as I need to.  I like having a monthly meal plan because I can pencil in meal ideas when I find new recipes I want to try or discover foods unexpectedly on manager special.

We enjoy fresh/frozen fruit with every meal although I don't always list what that fruit will be unless it's something I need to pull out of the freezer ahead of time.  We also have salad almost every night in addition to the vegetable listed.  We are a dessert family.  Our desserts are not always thrilling . . . sometimes just ice cream, a popsicle now that the weather is warming up, a piece of candy from the kids' treat bags, and the occasional homebaked goodie.  If it's something I need to make, I list it in the menu plan.

Here's what we'll be enjoying around our table this week:

MONDAY - Pork chops on the grill, potato packets, green beans
TUESDAY - Chicken tostadas, Peaches and raspberries (from freezer)
WEDNESDAY - Mediterranean Pork Pita Sandwiches, Greek Salad
THURSDAY - Crock Pot Chicken Stew, Cranberry Sauce, Salad, Oatmeal Scotchies

SATURDAY - Chicken Kabobs, Rice, Edemame, Salad with mandarin oranges

Menu Plan - March 26 - April 1


It's Spring Break around here this week which means my Meal Plan is a bit looser than usual.  Let's just say I have ingredients to make certain meals on hand, and I have somewhat of a plan as to which night we're going to eat them.  I'm also trying to allow the kids some freedom to enjoy their week off from school, so things may not go all according to schedule, and that's okay.  The girls have some ideas of things they want to try out this week in the kitchen, and I love when they show an interest in cooking with me.

Here's what we plan to be enjoying around our table this week:

MONDAY - Turkey Noodle Soup, Salad
TUESDAY - Pioneer Woman's Sausage Pancakes on Sticks, tater tots, fruit smoothies
WEDNESDAY - BLTs, cheesy broccoli soup, Cherry Coke Cupcakes
THURSDAY - Chicken Pizza, Salad (not sure yet if it will be BBQ or ranch pizza)
FRIDAY - Fish Fry at church
SATURDAY - Backyard Birthday Cookout (burgers, brats, chips, veggies and dip, blueberry delight dessert)
SUNDAY DINNER - Pioneer Woman's Ranch Chicken and Crash Hot Potatoes, (both from her new cookbook that I had signed last week!), Asparagus

Meal Plan for March 5-12



One of the best things I've done in my kitchen over the years is to meal plan! Having a plan written down makes that "witching hour" of 4:30-6 pm go so much more smoothly. Do we always follow the plan down to each detail? No, not always. Sometimes what I plan on Sunday to eat on Thursday isn't what I feel like fixing come Thursday. Or we might have a change in plans that will not allow for me to make what's on the menu. Or I might forget to get the meat out of the freezer in time to thaw. But it's a start, and that's what matters most. A plan is a very good thing to have!

With our busy schedule and commitment to eating together as a family nightly, I've come up with a thematic night approach to planning our weekly menu. I've used a variety of menu planning strategies over the years, and this seems to be working best for our family at this stage of life. We have fruit at every meal, but I don't always write that down in the plan. We just sort of pull together what we have on hand.


Here's what's on our menu for this week. 

CROCK POT Monday - Honey Garlic Chicken, Rice, Steamed Broccoli
COMFORT FOOD Tuesday - Potluck Meatballs (as seen on Pioneer Woman), Mashed Potatoes, Asparagus
SANDWICH Wednesday - Ham/Cheese Stromboli, Salad, Chips
KIDS PICK Thursday - Walking Tacos, Dirt Pudding Cups
MEATLESS Friday - Pasta with Red Sauce, Cheesy Garlic Bread, Salad
NEW RECIPE Saturday - Make your own pizza (new pizza crust recipe from Pioneer Woman), Italian Salad
BRUNCH Sunday - Egg Casserole, English Muffins with Strawberry Freezer Jam

A New Week - Rebounding from Surving Back to Thriving

Last week was one of those weeks when it was just about all I could do to keep us fed, clothed, transported to all our activities, and maintain some level of acceptable cleanliness around the house.  I came down with a head cold.  It wasn't bad enough to make me want to stay in bed all day, but let's just say that I didn't have the energy to do anything extra. 

We did still manage to eat some good dinners last week, but I didn't take too many photos or sit at the computer to write the anecdotes to accompany the recipes.  This blog is my hobby, after all!  There may be some extra posts this week as we did have a few new yummy things!

We'll see what this week brings!  I'm already a day behind with my menu post for the week as it was nearly an all day chore to get the house picked up and get the laundry back under control yesterday.  If nothing else, last week reaffirmed that the little bit I do every day to keep the house organized does make a big difference. 

We have a bit of an up in the air weekend coming, so my menu is a little sketchy for those days.  I have plenty of things around here to eat, so I know we won't go hungry!

Here's what we'll be eating at our house this week.  As always, we'll round out our meals with salad and fresh fruits from our produce drawer.




SOUP NIGHT MONDAY - Spaghetti Soup, Cheesy Garlic Bread, Vanilla Cupcakes with Lemon Cream Frosting
ONE DISH TUESDAY - Chicken Enchiladas, Rice and Beans, Salad (never had this last week as planned; had chicken tacos instead)

I did a BIG grocery shop on Friday, Feb 17.  I spent around $120 which included my husband's Starbucks coffee for the next several months, toilet paper, wax paper/aluminum foil/parchment paper/various plastic bags, and laundry detergent.  But my mother in law was here and the kids were hungry and ready to have lunch when I got home, so I never took a photo of what I purchased, and quite honestly now I don't even remember all the deals I snagged that day.  I know I put 3 loaves of whole wheat white bread for $0.79, some slider buns for $0.49, and 3 meals worth of boneless pork chops (sliced by the butcher into chops from a boneless pork loin) for $6 into my freezer

I did hit the Meijer last Friday morning to take advantage of the 10 for $10 sale.  I picked up quite a bit of $1 produce including spinach, bagged salad, peppers, mushrooms, potatoes, carrots, and strawberries.  I also found a good deal on Gogurts for the kids' lunches/snacks at $0.92/box, Sargento Shredded Cheese for under $2/bag, and several boxes of Hamburger Helper for 50 cents and cans of chicken noodle soup for $0.30 to donate to our local food pantry collection for our oldest's Upward basketball team. 



Total Spent: $62.34
Total Saved Using In Store Specials and Coupons: $47.29

But it's a start, and that's what matters most. A plan is a very good thing to have!

With our busy schedule and commitment to eating together as a family nightly, I've come up with a thematic night approach to planning our weekly menu. Sunday Dinner - Shredded Chicken Sandwiches, Corn Casserole, Broccoli Slaw, Red Velvet Cupcakes

Meal Plan Jan 30 - Feb 5

Do we always follow the plan down to each detail? No, not always. Sometimes what I plan on Sunday to eat on Thursday isn't what I feel like fixing come Thursday. Or we might have a change in plans that will not allow for me to make what's on the menu. Or I might forget to get the meat out of the freezer in time to thaw. But it's a start, and that's what matters most. A plan is a very good thing to have!


Menu planning was quick and easy this week because I have been using a monthly calendar to plot out the meals I have in mind based upon what we have on hand in our pantry and freezer.  We had a few changes in our menu plan last week at the last minute due to schedule changes and a key missing ingredient in the pantry, so the Spaghetti Soup and the Ham and Potato Soup are making a repeat appearance on this week's menu. We also ended up going out to eat on Sunday night for a Family Date to Texas Roadhouse, so we'll be having macaroni and cheese this week on Kids' Pick Night.  This Saturday, Feb 4, is National Nutella Day (can't remember where I read that one), so we'll be celebrating with a special breakfast on Saturday morning.

One Dish Tuesday – Baked Ziti, salad, bread with dipping oil

Menu Plan Jan 23-29

Or we might have a change in plans that will not allow for me to make what's on the menu. Or I might forget to get the meat out of the freezer in time to thaw. But it's a start, and that's what matters most. A plan is a very good thing to have! 

Menu planning was quick and easy this week because I have been using a monthly calendar to plot out the meals I have in mind based upon what we have on hand in our pantry and freezer.  I took a quick look at our family calendar and made sure that the meal preps would work with our schedule, added in some fresh fruit and veggie/salad sides from my weekly trip to the grocery store, and we’re all set.  Saturday dinner is up in the air, as we have a slew of kids' activities going on at the same time and we're not exactly sure how that's all going to come together yet.

Or we might have a change in plans that will not allow for me to make what's on the menu. Or I might forget to get the meat out of the freezer in time to thaw. But it's a start, and that's what matters most. A plan is a very good thing to have! 




Menu planning was quick and easy this week because I have been using a monthly calendar to plot out the meals I have in mind based upon what we have on hand in our pantry and freezer.   I had to venture off my typical themes for this week a bit, but not too much.  This week, I took a quick look at our family calendar and made sure that the meal preps would work with our schedule, added in some fresh fruit and veggie/salad sides from my weekly trip to the grocery store, and we’re all set.

Here’s what we’ll be having on our table this week:

Mondaypork fried rice (w/ leftover pork roast from Sunday), orange Asian salad, fruit
Tuesday – mini meatloaves, make ahead mashed potatoes, green beans, spiced apples (from freezer)
Sandwich Wednesday – Stromboli, tossed salad, fruit
Kids' Pick Thursday – Pork Carnitas (from freezer), rice, beans, salad
Friday – Grilled cheese, vegetable soup, choc chip banana cake (w/ bananas in freezer)
Saturday – U-Pick Lunch (leftover buffet), Hamburgers (from freezer), baked beans, veggies/dip
